Easy and Delicious Lemon Herb Roast Chicken
If you’re looking for an easy dinner that is both satisfying and delicious this lemon herb roast chicken ticks all the boxes.
Kids will love it because the chicken is tasty but minus the spice and it’s perfectly paired with homemade sweet potato chips or corn on the cob.
Preparation time: 5 minutes, cooking time 1 – 2 hours
2 lemons, sliced
1 tablespoon rosemary
1 tablespoon thyme
2 cloves garlic, thinly sliced
1 x 1.5kg ready-to-cook chicken, preferably organic
dash salt & pepper
1 tablespoon extra virgin olive oil
Preheat oven to 200C (180C if fan forced). Layer ½ of the lemon slices on the bottom of a roasting tray. Stuff the chicken cavity with ½ of the herbs and ½ of the sliced garlic.
Place the chicken on top and season generously with salt & pepper. Place remaining lemon, herbs and garlic all over the chicken, ensuring even coverage. Drizzle with olive oil. Cover with a lid or foil.
Bake for 30 minutes. Remove the lid or foil and roast for another 30 minutes. Reduce temperature to 180C or 160C for fan forced and roast for a further 25 minutes or until chicken is cooked through. It is fully cooked when juices run clear (if a skewer is inserted into the thickest part of the meat).
Turn off the oven and rest for 10 minutes.
Serve with pan juices poured over the top and a side salad or roast veggies. Enjoy!
